Ingredients
A Medium sized
brinjal (choose one that doesn’t have many seeds in it)
1 Tsp Turmeric
powder
Salt to taste
Mustard oil 3
tbsps (for frying the brinjals)
Method
- Wash and cut the brinjal into circles.
- Rub turmeric powder and salt well on both sides of the brinjal pieces.
- Heat mustard oil in a frying pan.
- Now, add the brinjal slices and increase the flame to a maximum.
- After 30 seconds, reduce the flame to minimum and cover the frying pan. Let the brinjals cook for 6 minutes.
- Remove the cover and turn the brinjal slices.
- Let the brinjals cook over medium flame for 2 more minutes.
- Remove the brinjal pieces from the frying pan once both sides turn golden brown.
- Serve hot with Rice and Dal.
