Begun Bhaja


Ingredients

A Medium sized brinjal (choose one that doesn’t have many seeds in it)
1 Tsp Turmeric powder
Salt to taste
Mustard oil 3 tbsps (for frying the brinjals)

Method 
  1. Wash and cut the brinjal into circles.
  2. Rub turmeric powder and salt well on both sides of the brinjal pieces.
  3. Heat mustard oil in a frying pan.
  4. Now, add the brinjal slices and increase the flame to a maximum.
  5. After 30 seconds, reduce the flame to minimum and cover the frying pan. Let the brinjals cook for 6 minutes.
  6. Remove the cover and turn the brinjal slices.
  7. Let the brinjals cook over medium flame for 2 more minutes.
  8. Remove the brinjal pieces from the frying pan once both sides turn golden brown.
  9. Serve hot with Rice and Dal.
