Dhokar Dalna (A typical Bengali Dish to Relish)


This is one of my favorite dishes that my Mom used to make at home.  During one of her visits to Mumbai, she got me the ready mix for making Dhokas but soon this got over and I had to search for the actual methods for preparing this special dish. Unlike the other recipes on my blog, this one is quite time taking, but trust me, it is worth it…

Ingredients
Chana Dal 250 Gms
Red chillies 3 or 4
Salt to taste
Sugar
Refined oil for deep frying the dhokas
Mustard oil for the gravy
Ginger paste
Cumin seeds
Cumin powder
Coriander powder
Turmeric powder
Red chilli powder (Make a paste of Cumin, coriander, turmeric, chilli powder and ginger paste)
1 medium tomato

Method
  • Soak the chana dal overnight. Next morning add red chillies, 2 tsp sugar, 1 tsp salt and 1 tsp chopped ginger to the chana dal. Grind all the contents together by adding some water to it. This is the paste required for making the Dhokas.
  • Heat 1 tbsp of mustard oil in a Kadhai and add the chana dal paste to it. Cook for 2 or 3 minutes till the water gets evaporated.
  • Grease a plate and uniformly spread this paste over it. Let it cool down for some time and then cut out pieces in the shape of a diamond. Deep fry these pieces in refined oil and thus you would get the dhokas.

The Dhokas

After Deep Frying
  • Now in a Kadhai, heat 2 tbsps of mustard oil and add few cumin seeds.
  • Once the cumin seeds start spluttering, add sugar to it.
  • Now add the paste of all the spices to the oil and cook for 2 minutes on medium flame. Add chopped tomato and salt to taste.
  • Cook all the ingredients together on high flame till the oil starts separating from rest of the spices.
  • Add some water (For the gravy) and let it boil for 5 minutes.
  • Now add the fried Dhokas and let it cook on high flame for a minute or two.
  • Spread some ghee over the gravy and remove from flame.

Dhokar Dalna
 Serve this delicious Dhokar Dalna with hot rice.
